A trip to Iloilo will never be complete without having at least a bowl of the famous La Paz Batchoy. Batchoy is a hot noodle soup garnished with bits of pork, liver,intestines and crunchy pork cracklings. Batchoy originated in La Paz, Iloilo, hence the name.
It is said that "guinamos", the Ilonggo version of bagoong or shrimp paste is the secret ingredient in making the broth. Originally, round noodles or miki is used in making batchoy, it now has new varieties where one can opt for sotanghon, miswa, or bihon.
Though Ted's and Deco's, the two reigning Batchoy chain, are now available in some parts of Luzon, still nothing beats those that are made in Iloilo.
