Baye-baye is a sweet Ilonggo delicacy made from scraped young coconut meat, sugar and pinipig (pounded rice grains). There are variations on how baye-baye is made and the ingredients used, where the native delicacy was made also makes a difference.
It said that Pavia's baye-baye is the best in Iloilo, it is made from carefully selected ingredients since small variations on the choice of coconut, kind sugar, and how well the pinipig was made affects the end product.
In making the best baye-baye, the maker first prepares the pinipig and scrape the young coconut for grinding. These will then be mixed together. Ten minutes or more, sugar of exact proportion for the mixture will be added. After which, the baye-baye will be wrapped, placed inside a closed container or ready to be served. Baye-baye is also best served when chilled and can easily be prepared at home.
The popularity of this sweet treat has made it a favorite pasalubong item from those hailing from Iloilo. Kiosks selling baye-baye can be found along Pavia's highway on the way to the airport.
